Cookie dough’s true home is in cupcakes.

by Elizabeth on January 29, 2014

Thanks so much for all of the great reading suggestions yesterday! I can’t wait to try some out. Schools were cancelled again here in Houston yesterday (although there wasn’t any ice or snow where we are?) My mom sent me this picture of the snow they got a little further north. Check it out!

As I mentioned, Joe worked from home which really threw Noah off. He didn’t understand why daddy was home and couldn’t play with him! I packed up our things and took him to play at the mall play place so he could burn off some energy!

Much better.

A family on our street had their third baby last week so everyone signed up to bring them a dinner for a few weeks, I remember how incredibly helpful it was when people brought us meals after Noah was born so I was more than happy to help! We started with the most important part of any meal: dessert.

Noah helped me make Valentine’s cookie dough cupcakes and we had such a blast. This kid loves sprinkles! To make them, I simply whipped up a boxed funfetti cake mix (what kid doesn’t love funfetti? Heck, I love funfetti), poured it into the cupcake tins, dropped a ball of pre made cookie dough into them, and cooked, frosted, and decorated them! So easy!

For the main meal, I made a creamy pesto chicken pasta dish. Half for their family, half for ours! They texted later on to say that their girls were asking to bring it in their lunches the next day so I think it was a hit. Or else they were just trying to make me feel good ;-) Either way, it worked.

A few posts back, I blogged about a few parenting tips I’ve learned in therapy. Yesterday I came across this article and I also found it very informative! Any parents (or anyone really) might also get something useful out of it!

I hope you have a great Wednesday! Stay warm :-)

Questions:

1. What’s your favorite kind of cupcake?

2. What are some fun things you do when you’re stuck inside??

I love cookie dough cupcakes! I have made them like yours before (ps Funfetti is the best) but recently I’ve left the dough raw. I should share the recipe but I’ll just tell you, ha. I bake the cupcakes and made eggless cookie dough. After cupcake has cooled, I cut out a little hole, put some cookie dough in, icing, and top with little cookie dough balls on top! So delicious!! I mean, any version of cookie dough (raw or baked) in cupcakes is the bomb! Mmm!

That is a really good idea! I usually cook them about 5 minutes less than it says and it leaves the dough pretty raw. Who wants a rock hard cookie? ever?

I’m intrigued by this blackberry cobbler cupcake you speak of! Salted caramel is my second favorite (behind cookie dough) easy! Clearly I should have been at your wedding!

Those sound so good! I love dark chocolate cupcakes, I had some a wedding this year and it was amazing!
When I am stuck inside I like to play board games, clean and bake… kinda boring, but fun!

How have I never heard of cookie dough cupcakes? Genius! My favourite is carrot cake with cream cheese icing, ALWAYS.

I don’t get stuck inside very often (us Canadians have to be tough) but when I do I take full advantage of it and enjoy my hot tea and books for a lot of guilt-free hours. :)

Girl I can’t even imagine living in Canada. I’m considering moving farther south than Houston. And yes, cream cheese icing ALWAYS!!!

How lucky to live in a neighborhood that supports each other like that! I hope when we finally buy a house we can find an environment that is warm and welcoming! My favorite cupcake depends on my mood – sometimes I crave fruit sometimes only chocolate!

Cookie dough’s true home is in my belly! ;) These cupcakes sound great though – love the idea of putting cookie dough in cupcakes! I love pretty much any kind of cupcake as long the cake is moist and there is butter cream of cream cheese frosting.

I actually thought of that very thing when I titled this post. If it’s in a cupcake though it’s second home is my belly ;-)

My favorite kind of cupcake is a chocolate cupcake with chocolate frosting! I’ve never tried a cupcake with cookie dough in it though, that sounds amazing! When I am stuck inside I will normally read, clean, watch TV, read blogs, and pretty much anything I can do to keep busy ha :)

Normally I would say chocolate cupcakes with white icing are my favorite, but after seeing that cookie dough in the ones you made, I might just change my mind!

Love your mom’s note to Noah! :-)

I’m in Alabama and our schools were closed yesterday and today, and I just got word we’re closed tomorrow due to ice that is still on the roads. I teach 3rd grade, and let me tell you, teachers love snow days as much, or more (?) that the kids! I saw your photo on instagram last night…those cupcakes are adorable!!!

I hope you plan to share that creamy pesto pasta recipe. Sounds like something my husband would love!

PS. ummm…awesome mall play place!

We have a gourmet cupcake place (actually a few locations) here in Chicago called Crumbs that I’m absolutely in love with – they have a mint chocolate cupcake that is amazing. But my favorite to make on my own is just simple chocolate with chocolate frosting :)
