Two ingredient chocolate kale chips and Friday favorites!

I know, I know. I’m like that terrible guy who takes you out on a date and then you don’t hear from him again for ages. In all honesty, having a sick child and being sick yourself leaves little room for blogging so it took a backseat this week. Hopefully next week we will be back up to speed! 

Just as an FYI to parents, if your child is ever sick and your pediatrician isn’t open DO NOT take them to any urgent care. We have made this mistake twice and the first time the physician gave him a medication that wasn’t for children and this time he was wrongly diagnosed with ear infections. Take them to a pediatric urgent care or emergency room, even though they are fewer and father between.

Noah had hand, foot and mouth disease so we are still waiting for him not to be contagious which has limited our activities this week! That’s ok, we’ve still had some fun :-)

First, I’ve decided every Friday for a while will be donut day. Noah’s likes powdered and I like anything with chocolate frosting/filling. The more, the better!

Secondly, this is the best meal we had all week. I HIGHLY recommend it. Ravioli is one of my favorite Italian dishes and this is the best combination I’ve ever had! I used olive oil and parmesan for the sauce.

And the last thing I wanted to share with you was a recipe I tried on Sunday…

Two Ingredient Chocolate Kale Chips

Yep, that’s it! Just chocolate 1/2 cup nut butter and a bag of kale. I mixed them in a big bowl until the kale was thoroughly coated with the nut butter. I don’t have a dehydrator so it probably would have made them crispier if I had used one but I still think they turned out great. Even Noah ate them and he usually hates lettuce. After spreading them on a baking sheet I cooked them at 400 for 15 minutes on one side and then flipped them and put them back in the oven for another 5 minutes.

I actually ended up adding coconut and raisins to half the batch just so I had two varieties and I liked that one better, but both were really good.

Such a good idea for those kale chips! I’ve seen some sweet versions out there, but still haven’t tried them out for myself.
I think I need to though.

I love the idea of donut day! Hunter and I are totally doing that when he gets older. ;)

Those chocolate kale chips intrigue me! Are they at all bitter from the kale? I’m having a hard time imagining what they taste like.

They’re not at all bitter. Much more dessert-like! The ones with the coconut and raisins you can’t taste any kale which is how I got Noah to eat it :-)

Aw, poor little guys looks miserable! Hope he feels better soon. Those kale chips sound delish! I have a bag of kale sitting in my fridge that needs to be used up, so kale chips may be on the menu!
