Learning to take days off.

Sorry for my absence yesterday! This week is a little busier than I anticipated as I get ready to head to Minnesota on Friday, getting involved at Noah’s school, and some other random stuff? a day off here and there never hurt anyone is what I’m learning ;-) Or in my case almost 3 weeks off!

So I did make a trip to see this little one. Charlotte looks EXACTLY like her mom’s baby pictures. It was awesome.

Noah spotted this on our walk and got so excited he couldn’t talk or breathe even. Who wants to get him an early birthday gift?

I was on my own for dinner yesterday which gave me a chance to try a recipe I knew Joe might not like too much. Day 9 = Pumpkin soup for one!

Pumpkin soup

Ingredients:

  • 1/2 can of pumpkin
  • 1/2 cup butternut squash
  • 1/4 cup sauteed onions and carrots
  • 1/2 tsp cumin
  • 1/2 tsp ginger
  • 1/4 tsp cinnamon
  • 1 tbs sour cream

Instructions:

  • I sautéed my butternut squash and pumpkin in a pan while also sautéing the carrots and onions in a separate pan. The carrots and onions only took about 10 minutes so I then added them to the pan with the pumpkin mixture. I let it cook for 20 more minutes when I added in all of the spices and salt and pepper. I like my soup thick so I also added the sour cream when it finished cooking but if you like it thinner you could add some vegetable stock and water!

have fun! I wanted to go so bad! Next year for sure! I’m going to have to look for those caramel apple chocolates! Have you tried the smores? Amazing!

I love how observant Noah is!! It reminds me of my mom saying she always thought my brother would be a brain surgeon because he was so good at picking the onions out of dinner. Have a blast this weekend! I look forward to reading all about it!

I feel ya on taking a day (or 50 off)! I’m struggling right now, but have NO choice due to ending up in surgery yesterday. But the “taking a day off” started last week because the issues associated with the surgery started last week…my back is killing me from being couch-bound and i’m antsy to hit the pavement – or the gym. When I saw my discharge papers yesterday and they just mentioned no lifting or straining, I thought, huh, nothing about RUNNING! ;) But I know it’s going to be a few weeks before I can get back at it – which really doesn’t make me happy because this is my favorite time of year to run! :( But i’m going to stop complaining and be thankful that I’m ok and just try to enjoy the downtime!
