How is everyone this morning? It’s only 6:30 am and today is already the best day I’ve had in a while :-) Yesterday was packed with volunteering, baking, and the arrival of this sweet little girl! One of my best friends and her husband welcomed Charlotte Mychaela Jones into their family!

This has become my latest lunch staple. Green chile grilled cheese (old picture but they all look the same?) I made them for a big group of people the other day and someone’s comment was, “I’m going to dream about that sandwich!”

After I picked up Noah we did some baking. I give you day 8 :-)

Ingredients:

Chocolate muffins

  • 1 box of chocolate cake mix
  • 3 eggs
  • 1/4 cup vegetable oil
  • 1/3 cup of milk

Streusel topping

  • 1/2 cup of sugar
  • 1/4 cup flour
  • 3 tablespoons of butter
  • 1 tablespoon of pumpkin pie spice
Instructions:

I followed the directions on the boxed mix for the muffins (cupcakes) but before putting them in the oven I whisked together all of the dry ingredients for the streusel topping and cut in the butter until it had the typical crumbly streusel texture. I then sprinkled it on top of the batter and cooked them for 17 minutes.

Streusel makes life better. I think next time I’ll skip the muffins and just eat the topping.

Have I told you how I’m the newest employee of the Houston Texans? I’m training their future kicker.

I became a football fan last year when I finally took the time and effort to understand the game! I must say, I’ve been missing out! Goooooo Niners! :)

I am a huge football fan!! Love the Kansas State Wildcats, Kansas City Chiefs, and Green Bay Packers! I must say that kicker is quite handsome!!! Thanks for the recipe! Any pumpkin recipe has to be good as I am a pumpkinaholic! Have a great day!

Those baby feet prints are too cute. My Mom has a few of those saved up from when my Sister and I were babies.
Also that sandwich looks quite amazing. I kind of want a grilled cheese right now.
I adore to cook with pumpkin in the Fall! I haven’t yet – since it’s still a little too warm to bake but I can’t wait to get started soon.

I am an LSU Tigers fan all the way! Those sandwiches actually look delicious! I wasn’t so sure when I read that green peppers were in them, but I think I might have to try a grilled cheese like that!

Haha I just baked a lot of pumpkin things this morning. I made pumpkin muffins, granola, and pop tarts with pumpkin pie filling!

I’m not really a football fan too much, but I am a tailgating fan, so I go to the Redskins games:-)

I don’t want to bake with anything other than pumpkin in the fall.

I was born and raised a Bill football fan. I was the tomboy growing up watching football with the guys, I wanted to play pee-wee football but my mom was not going to let that happen!

Pumpkin seeds! Pumpkin bread! Pumpkin soup!! I love it!! A few years ago, my mom put the rest of her pumpkin in her compost to get rid of it and that old pumpkin has turned part of her yard into a pumpkin patch!! It is so cool and now I get organic pumpkins from my mom. Someone from work was talking about the different spices she tosses her pumpkin seeds in. Something I’m going to have to try!

I’m not really a football fan (I don’t think it’s as big of a thing in Canada) but when people ask I always say the Dallas Cowboys. I lived there for 7 years and carry a little piece of Texas in my heart.

I love making pumpkin breads and muffins in the fall! We’re Ravens and Redskins fans and our teams aren’t off to a very good start. At least our Hokies are 1-1. We lost to Alabama in our season opener. I think you guys play them this weekend.
