Fabulous food and finds!

by Elizabeth on September 9, 2013

I’ve been waiting for this week for about 6 months now! On Friday, I get to go to Minneapolis for the Healthy Living Summit and participate on a panel discussing the importance of self care, managing emotions, and finding your own happiness recipe with these two ladies! I couldn’t be more excited!!!

Speaking of recipes, Fabulous Fall Food continues. Friday night I made an Italian Sausage Casserole for our friends.

Ingredients:

  • 1 lb hot pork sausage
  • 12 biscuits
  • 1 cup of red pasta sauce
  • 1 cup monterrey jack cheese

Instructions:

Brown the sausage in a pan and add in the pasta sauce. Sprinkle in 1/2 cup of cheese. Pour mixture in an ungreased pan and place biscuits on top. Use the remaining cheese on top of the biscuits and cook for 20 minutes at 400.

We actually had a pretty low key Sunday. I have to say (and don’t judge) that the 99 cent store is really awesome. I got more produce than I can possibly eat this week for less than $10! And I’m not gluten free by any means, but I also found this cookie dough for, you guessed it, 99 cents so I bought it? or 6. It tastes just like regular to me :-)

I was just getting lucky this weekend on good deals. I also found two new sports bras at Target on clearance. My ones from college I still wear have seen better days. And heaven forbid I spend $15 on a new one. So I spent 10.

Please disregard the fact that I spent $3 on a single cupcake from Sprinkles 5.5 times a week. It’s irrelevant.

Ok last awesome find? can I just say how hard I laughed (and how happy it made me) that I found this right under the “intimate apparel” sign? YES.

Off to do more shadowing while Noah’s at school! Have a great Monday!

Questions:

1. Who will I be seeing at HLS???

2. What are some awesome finds you’ve had lately?

Hahaha I love those footie pajamas…I actually used to have a pair in my senior year of high school. It was pink with cats on it…#notashamed!

I wish I was going to the HLS! I can’t wait to see everyone’s recap of the weekend!

I also work at this cupcake bakery called The Cupcake Station (only four locations are in Michigan), and our cupcakes are $3 each. But dang they are so good. Plus, we are there baking every single morning (unlike a lot of places which ship their cupcakes from distribution centers and are loaded with preservatives…YUCK)

Have a great Monday!

You won’t be seeing me at the summit this year, although I hope you will someday!

That casserole sounds amazing. Sadly, I AM gluten free but will look for some biscuits to replace in there.

That looks so tasty!! I actually found the opposite of a good deal! I got my sister a quick lunch from a grocery store on her wedding day. I thought a quick sandwich and salad wouldn’t be too expensive but it came to $20!!! What! Oh well, she’s worth it :)
