Spinach and mushroom pasta with goat cheese

Welcome back for day 2 of my 30 Days of Fabulous Fall Foods! In case you missed day 1, it’s something you will definitely want to try.

I made this Thursday night after changing around something things in a recipe I pinned last week. I highly recommend it for goat cheese lovers! The best thing is I bet it would be good with your favorite kind of cheese? whether that’s bleu, gouda, brie, etc. I chose goat cheese because, well, it just makes life better. Let me be clear that the stronger cheese is just an accent. The base sauce is alfredo (all I had was the light version) but it didn’t taste “light” at all.

  • 16 box of rotinni pasta
  • 2 cups alfredo sauce
  • 1 cooked and shredded chicken breast
  • 1/2 cup cooked spinach
  • 1/4 chopped red bell pepper
  • 4 small sliced and cooked mushrooms
  • 2-3 oz crumbled goat cheese
  • garlic salt to taste


Very easy! Cook the pasta until tender and stir in alfredo sauce and garlic salt. Add in vegetables and chicken and top with the goat cheese. 

This is something I plan to make again! It looks and tastes fancy and it only took about 20 minutes to prepare.

Looks yummy! I’ll have to adapt the recipe a bit for everyone’s allergies, but can’t wait to try it out. :) thanks for sharing!!!

This sounds fantastic! I’m a huge goat cheese lover, so I’ll have to try this soon. And it will give me a reason to make homemade alfredo sauce in the Vitamix – double win!

Ooo I haven’t had a good creamy, cheesy pasta dish in a while! But I am having pesto risotto tonight, so that will have to do. ;) Thanks for the recipe!

How does spinach and mushroom pasta constitute “fall?” Is there something inherently seasonal about this dish? Haha just curious..
