Maple Bacon Butternut Squash Casserole

You better be enjoying this long weekend! We had an amazing day with family and friends yesterday. I haven’t sorted through all the pictures but I do have day one of my fall recipes ready to go for you :-)

When I first told Joe what I made he looked at me like I was crazy. First I’m serving him a dish with no meat (apparently the bacon in it didn’t count) AND I’m putting maple syrup on his vegetables. He wasn’t impressed.

I’m happy to report there were no leftovers. It was really rich and would probably be best as a side dish but we had it as the main course.

  • 1/2 butternut squash (cooked)
  • 1 egg
  • 3 tbs butter
  • 1/4 cup maple syrup
  • 4 pieces bacon (chopped)


  • Preheat oven to 400. Combine all the ingredients into a big bowl and mix well. The mixture will seem soupy. Cook in a greased pan for 25 minutes.

SO easy and good! Enjoy! Have a great Sunday!

Ooh I can’t wait to start cooking with fall squashes. Butternut is one of my faves and this casserole sounds amazing. I’ll make it when the weather is more fall-ish and not 90 degrees :\
