Kid friendly cupcakes and dinner recipes.

This morning we are off to meet my parents at the Children’s Museum to see Noah’s favorite character of all time, Daniel Tiger! Is it sad that I was really excited when I saw he was coming and have been waiting for this for about a month? 

Last night we had a back to school block bash with our neighbors. I made some kid friendly cupcakes to share. I added a drop of food coloring to the batter after it was in the cup and swirled it around so that the kids had a colorful surprise when they bit into it!

And I don’t know too many kids who don’t like sprinkles.

As I told you on Monday, spinach and bleu cheese flank steak was on the menu this week and this was one of those dinner recipes I can’t wait to make again! Then again, you could add bleu cheese to dirt and I’d probably say the same thing. Love that stuff.


  • 2 flank steaks (size based on how hungry you are? mine were long and skinny. I’d go with shorter and wider next time to make more room for filling!)
  • 1 cup of spinach, drained
  • 1/4 red bell pepper, chopped
  • 4 small mushrooms, chopped
  • 1/2 cup bread crumbs
  • 1/4 cup bleu cheese
  • 1 egg
  • garlic salt to taste
  • Marinade steaks in sauce of choice for 6 hours.
  • Grease a nonstick pan and preheat oven to 425.
  • in a bowl, whisk egg, salt, and breadcrumbs until smooth
  • add in spinach, red pepper, and mushrooms and continue to stir
  • lay two long strings of dental floss in pan and place steaks on top of them lengthwise 
  • divide vegetable mixture evenly over two steaks
  • top with bleu cheese
  • roll up the sides of the steaks and tie the dental floss so you have a stuffed steak
  • lightly coat outside of the steak with olive oil and more garlic salt
  • Bake for 20 minutes, flipping the steaks once

I initially forgot the dental floss to tie them up with so had to maneuver them on to the string.

Luckily, it still turned out great!

And for a somewhat healthier side I cut up yellow zucchini, and tossed it lightly in olive oil and breadcrumbs and cooked it at 400 for 20 minutes.

Tonight we are having some friends over for dinner so I’ll be trying another new recipe! Enjoy your Saturday!

Those zucchini fries look amazing! I love how kids get so excited about their favourite characters. You’ll have to take lots of pictures! My running my second half marathon tomorrow so I’m chilling and hydrating today. Who’s excited? This girl!!

We have zucchini coming out of our ears right now. I’ve been baking zucchini bread like crazy which I am okay with. But finding new recipes is good too! I need to try out your fries!
