Things I’m loving lately.

by Elizabeth on August 21, 2013

1. Daily walks to the park with this girl (and her mommy).

2. It’s gotten bad. In the past week I found these two colors (marshmallow and cascade cool) and with two others I added to my collection.

You’d think by now I’d be able to take a picture that isn’t blurry ;-)

3. I’ve been enjoying a spoonful of these every now and then. They have distinct tastes? not just chocolate and vanilla, and are so good! Even better, they were on sale!

ImageProxy mvc

4. Parmesan pesto tilapia. Enough said. This picture doesn’t do it justice!

5. And THESE!!! One of the best desserts I’ve ever made by far. I pinned a recipe for Cinnamon Roll Bites and fully planned on following it, however last night when crescent rolls were a part of the meal, somehow I ended up using that dough instead of making my own. Possibly my best decision of the day. I can’t even describe to you the warm doughy deliciousness below. Please just make them and send me thank you emails, cards, gifts, candy, etc.

Ingredients:

  • 4 triangles of crescent roll dough (half a roll)
  • 3 tablespoons of melted butter
  • 1/4 cup granulated sugar
  • 1/8 cup brown sugar
  • 1 tsp cinnamon
Instructions:
  • Preheat oven to 375 and lightly grease a baking sheet
  • Divide dough into 8 equal parts and roll into balls
  • Melt butter in a small bowl
  • Combine cinnamon, brown sugar, and granulated sugar in a separate bowl
  • Dip balls into butter and then into the sugar mix and coat well
  • Place on baking sheet (I put mine close together to keep them doughy)
  • Bake for 8 minutes
Holy wow. These were so good! I made very few (since I’ve been baking up a storm lately) but I will definitely make them again! Oh, and I melted vanilla icing and drizzled it on top. You could definitely make your own though.

Have a great Wednesday :-)

Cinnamon roll bites sound AMAZING! And I love those nail polish colors. I think pale colors are so much better than dark ones, and when they start to chip it’s not as noticeable. Win-win.

I’m with you on the Essie addiction. Not sure what it is about those colors that get me everytime. I just wish the color lasted longer.
That parm tilapia looks amazing…and I don’t even eat tilapia. I’m guessing it would be amazing on chicken though!

She’s adorable. I miss having little ones to walk with–they are always going to take the slow, exploratory route!

Umm you just totally made my day. . . I now have a reason to use the crescent roll dough in my fridge. Those look awesome. :) I am loving my coffee in the morning. And watching Luke sleep at night – is there anything sweeter than a baby sleeping? My heart just melts.

So when you come to NC you are going to still bake for us right? We’ll need all that goodness to refuel after our runs after all ;)

My nail polish collection has gotten a little out of hand as well, but the way I see it, those bottles pretty much last forever so it’s a good long-term investment :)

My boyfriend is obsessed with those Cookies ‘N’ Cream Hershey’s bars, so I’m love he’d love in love with that frosting. In middle school, I used to spread icing on graham crackers. Soo good; I highly recommend it ;).

My friend made the same thing last weekend using pastry dough (phyllo sheets I think!) and called it churros…it is SO good!

I have been loving Jalapeño hummus lately. I cannot get enough! I’ve also been loving returning to my fitness schedule after a month of intermittent traveling. One more weekend of traveling and I’ll be in one place for a while!
