Weekend highlights and cookie dough cupcakes!

How was everyone’s weekend? Ours was spent relaxing! Here’s a little catch up:

The weather was really nice (for Houston, only a high of 95 both days!) so we spent most of the days outside.

With fall in full swing (ha) I found these gems. You need these in your life. Just trust me since I’ve never lead you wrong before.

We got in a little park action.

Saturday night we had dinner with friends and I forgot my camera! Blogging fail. She made a delicious beef tenderloin and amazing sides. I brought these for dessert.

I followed this recipe for the yellow cake and then destroyed the frosting recipe so ended up running to the convenient store to get more really quick. To make them “cookie dough” cupcakes I add a drop of frozen cookie dough to the cup after I pour in the batter. It’s important that it’s frozen so it doesn’t cook as thoroughly and keeps the doughy texture. The reasoning is the same for adding it in the cup after you pour in the batter… If it touches the bottom it gets hotter and loses the doughy texture. Call me crazy or weird or anal about cupcakes but I want them to truly be doughy for you :-)

Garnish with more cookies as you see fit!

  • Spinach and Bleu Cheese Stuffed Flank Steak
  • Parmesan Pesto Tilapia
  • Mexican Sweet Potatoes
  • Kung Pao Chicken (same Sweet n Sour recipe, different sauce)

As far as baking goes, I’m thinking:

  • Salted Pretzel Caramel Brownies
  • Cinnamon Roll Bites

Cinnamon roll bites?! You have me hooked! I have made cookie dough cupcakes before, and like you, use frozen cookie dough (made from scratch) so it doesn’t bake away. I love these cupcakes because they combine my favorite things :)

1. I plan my meals… right before I make them. Yea, I’m not that organized when it comes to cooking. I just like to wing it.

2. Me! Um, when Halloween comes around, my roommate and I buy bags of candy corn, and they mysteriously keep disappearing within a day… Especially the pumpkin ones.

3. Ah, it’s a tie between PEANUT BUTTER M&M’s and pretzel. I might have to go with the peanut butter, but if they made peanut butter stuffed pretzel M&M’s, those would be my fave!

Some meals I plan way in advance (way = one day), and other meals are a last minute, throw it on the table as soon as my last client leaves kind of deal…. :-(

I love candy corn, but only eat it around Halloween. I’m kind of digging the coconut M&M’s these days! I would definitely try the candy corn M&M’s, though.

Cannot wait for the mexican sweet potatoes! I make my own version, so I’m interested to see what you do with yours!! I usually plan my meals during that day. Sometimes I have an idea of what meals will be during the week, but a lot of my runs are spent planning meals for the day. Is that weird? I really like peanut m & ms or coconut m&ms.

I’ve been doing monthly meal plans, which I LOVE because I don’t have to go to the grocery store nearly as much. I only plan during the week, though, and eat whatever I want on Friday night/Saturday.

Hate candy corn, but love cookie dough, so those cupcakes look great.

I plan our meals on Saturday or Sunday for the upcoming week! Helps me out as I do my grocery shopping on Mondays.

I looove candy corn. It’s like crack!

I am the worst at meal planning, I’m really thinking I should start so I can have some extra time in the evenings. Whoops. I keep planning to start but then get too distracted.

Those cupcakes look AMAZING!

We don’t generally plan more than a week in advance for meals. We only plan that far ahead because we only grocery shop once a week, so we need to get whatever ingredients will be needed for the coming week.

I love candy corn! Can’t say I may ever try those though…seems weird to me.

My fave M&Ms are definitely the peanut butter ones, followed closely by peanut. Sensing a theme?

I typically only plan meals a day or 2 in advance. My fiance and I both carry crazy schedules and every time I plan our dinners for the week it never happens due to changes. I plan my meals for lunch though, usually make enough of something on Sunday to last me through the week.

I typically plan out our meals on Saturdays or Sundays, but haven’t done it in the past 6 weeks or so due to morning (all day!) sickness. My husband has been super cool and could care less about it, but I’m looking forward to feeling better soon & getting back to it! My favorite M&Ms are probably peanut or peanut butter. Looking forward to how the Parmesan pesto tilapia turns out- I have some in the freezer and need anew recipe to use it up!

Wow! Those cupcakes look heavenly! I’m envious that you have time to try so many different dessert recipes! I would try a new one everyday if I could! :)
I try to plan my meals for the week over the weekend and do my grocery shopping on Sunday. I always go into my work week more confident if all of this is done in advance.
Candy corn and dry roasted peanuts are a combination that does not fail!!! Kind of tastes like a Payday candy bar.
As far as M&Ms go, I like to stick with the good old peanut M&Ms. My mom keeps a candy dish fully stocked with these at her house and I look forward to raiding the stash every time I go…and so do my kiddos! :)

I like to plan my meals a week in advance. I always go grocery shopping on the weekend and get everything I need for the week. It makes things so much easier in the week when it’s busy! I haven’t baked anything lately, but I really want to make some homemade protein bars!

YUM! Those cupcakes sound ridiculously good!

I’m not a HUGE candy corn fan. I could take it or leave it. My favorite M&M variety by FAR is the dark chocolate. Then again, I’m a fan of pretty much anything dark chocolate.
