A new family member and other deliciousness.

Yesterday we made a trip to see the newest member of the family. Meet Gavin:

What a sweetheart! No not you, Kaylen…

I think you knew at this point you weren’t going to get out of here without me sharing another recipe we tried? Cauliflower Chicken and Ranch Casserole.

Ingredients:

  • 1 block of cream cheese
  • 2 cups steamed and mashed cauliflower
  • 4 oz. sour cream
  • 1 lb. cubed chicken (cooked)
  • 1 packet ranch seasoning
  • 1 cup cheddar cheese
  • bacon bits and garlic salt to taste
After the cream cheese and cauliflower softened, I creamed those with the chicken, ranch seasoning, and cauliflower. I also added about 1/2 cup of bacon bits and a few shakes of garlic salt (really exact, I know). I spread the mixture in a baking dish and topped it with the cheddar cheese and remaining bacon. It was cooked at 350 for 25 minutes.

I had that for lunch yesterday. For dinner we successfully worked on cleaning the rest of the leftovers out of the fridge as well! Time to make more Pinterest finds?. who’s coming over?
 
I’d offer you a bite of my salted caramel cupcake, but that baby is long gone.
 
 
Have a great Wednesday! We are off to walk with a friend and then I continue my volunteer training. I also have an idea swirling around in my head for what could possible be the best dessert ever invented (cliff hanger, I know). Stay tuned!

Yay for babies! What a cutie!

I have a pretty low key week that is ending with attending a preseason NFL game on Friday night! I’m really looking forward to it. As far as cooking goes, I really like baking and cooking meals. I guess I just like cooking in general. And maybe even more than cooking I love seeing people enjoy the food I make.

This week, I started on my new job. My schedule’s not set yet, so I’m working odd hours. Like today, I have the day off. Woohoo.

I like baking and cooking meals equally. Both end with tasty results :)

I like making sweets but buying them can be just as good sometimes. I do think it’s more rewarding to make it at home, but again…grabbing something at the store quick can be nice in a emergency sweet tooth situation!

I prefer making real meals because they can be used as leftovers. Unless I portion my sweets PERFECTLY, I always have too much and I end up having to give them away.

There are so many new babies in your family! How fun :)

Update: 4.5 weeks left until the marathon. Getting my sister ready to leave for college this weekend. Working two jobs. Moving into my new place next weekend.

Gavin is so cute! Congrats Nicole and Landon! And I laughed at your Kaylen picture comment ha! Mitch and I were thinking we should try making our own cookie cake… Then it’s guaranteed to be very doughy! I want the icing to taste just like GAC though so how about you figure out the exact frosting butter sugar ratios for me for your next project! Gracias! :-)

Congrats on a new nephew! He’s a cutie!

I like to cook, but hate the day-to-day drudgery of making dinner immediately after work. If I have time, I enjoy it much more. I LOVE to bake! When my sons were little, there was nothing I loved more than to make cookies with them! :-)

I prefer eating sweets, but I don’t enjoy baking. For that matter I love eating dinner but I don’t enjoy cooking either. I really am very grateful when others cook for me. However I’d rather cook than bake.

What’s going on this week, it’s a nutso week for me! I’ve got almost 1,100 12-18 year old girls from church coming this weekend to a 5k I’m race director of followed by a conference (I’m only in charge of the 5k, but I’m the pianist for the entire conference) and then on Sunday I’m playing the organ plus musical numbers in church and then I have a small performance that night with my symphony.

This will be the best weekend ever!

I definitely prefer baking to cooking. Not only because the outcome is so much tastier, but because I’ve been baking for a lot longer so it makes more sense to me. My huge sweet tooth might also play a big role in that, though

Cheeeeeeeeeeseeee. See Noah, it’s really not that hard.

You should have seen your little man going WILD in build-a-bear yesterday. Geez!!! I gave him a Target dog that has a monkey outfit on… all day he would say “It’s a monkey, now it’s a dog.. now a monkey, now it’s a dog!!” It was so cute.

Nephews and nieces are so much fun! Congrats! Don’t spoil him too much! ;)

School has started back for us this week so we are trying to get back in the groove. So hard!

Definitely baking (and eating) sweets! That is one of the reasons I run, after all! :)

What a cutie!!! Lots of running & working for me this week. If I had it my way, dessert would be eaten for at least 2 meals a day ;-), so it is safe to say, that I like to make sweets more than meals!
