Green chile festival, skinny funfetti dip, and a VERY sad story.

HAPPY BIRTHDAY to my best friend Brooke!!! I hope you have the best 25th birthday with lots and lots of cookie cake :-) Also, my cousin Nicole is being induced with her first little boy, Gavin, today. Keep her in your thoughts and prayers!

How was your weekend? Ours was pretty low key. On Saturday, there was a hatch green chile festival at Central Market so we met the family there for dinner. EVERYTHING had green chile in it. It was awesome! Noah wasn’t so sure about it though…

We snacked on some appetizers but when the actual food got there we were so hungry no pictures were taken…

I was so excited because Central Market is right down the street from Sprinkles! I made sure we left dinner in time to get there before it closed and even had a bargaining strategy ready to go since it was almost closing time and what were they going to do with all the remaining cupcakes anyway? Well turns out going late = only the terrible flavors left like dark chocolate and strawberry.

I cried a little too loudly on the 45 minute drive home.

Lunches this weekend were both paninis. One plain grilled cheese and one with green chile.

We had some company over in the afternoon which was a perfect excuse for me to engage in my pinning addiction. ImageProxy mvc

My version of Skinny Funfetti Dip:

  • 1 box of funfetti cake mix
  • 1 tub light cool whip
  • 8 oz fat free vanilla yogurt
  • sprinkles for garnish

Mix together the ingredients and let refrigerate for an hour. Serve with cookies, animal crackers, fruit, etc. and enjoy :-)

I went to Hill Country for a BBQ feast deal that I got online. It was $40 for two people and there was so much food, we were stuffed! The best thing was the dessert. We got a strawberry rhubarb crisp that was AMAZING. By that point, I was so full that I got to bring home a nice portion of BBQ and a bread pudding made with cinnamon rolls!

Oh wow that is the easiest recipe ever! I think the health food store even has a “healthier” funfetti mix (WW flour, etc). Ill have to give it a go!

That dip looks so fun! I keep wanting to try a dessert dip like that. And I think I’m craving some grilled cheese…
Best thing I ate would have to be the froyo I had Saturday night. Can never go wrong with that ;-)

Ahh funfetti dip! That could be dangerous…even if it is skinny, because I would be going back in that dip more times than I need! ;)

Best food this weekend was some salsa/guac from my friends garden! It was wonderful.. literally gone in 60 seconds!

Birthday is May 12 :) a spring birthday… far far away from now! I celebrate half birthday’s though too– Nov. 12 !!

I have been wanting to make that dip!!!
I did not have anything that exciting to eat this weekend….but you have to try grilled PBJ on your panini press!!!! It sounds gross but it is actually great!
