Bring on the fall. And the falafel.

by Elizabeth on August 9, 2013

Something about this picture is just not right.

104 degrees at 6:15 pm? Yeesh. Bring on the fall!

I do happen to know two little rug rats that don’t seem bothered at all by the heat (although this was at 9 am?)

If you are a stay at home mom I cannot stress enough how AMAZING mom’s groups can be. I met one of my best friends through one last year and my life would be missing a big piece without her and her little girl in it!!!

I don’t know if you remember this post, but I am determined to broaden Joe’s ethnic palate. Last night I made homemade falafel burgers and “easy” tzatziki (if you can ever learn to spell that word without having to look it up you are my hero) sauce.

Mission accomplished.

For the falafel I used:

  • 1 can chickpeas (mashed)
  • 1 tsp cumin
  • 1 tsp corriander
  • 2 tbs flour
  • 2 tbs sunflower oil
  • garlic salt to taste
Ground the chickpeas and mix in all the spices. Roll them into patties and either a.) fry them in oil until they float, or b.) bake them at 350 for 20 minutes, flip once halfway though.
For the tzatziki:
  • 1 container of fat free plain greek yogurt (I used chobani)
  • garlic salt to taste
  • pinch of parsley
Obviously we also used hamburger buns, avocado, tomato, and lettuce! They turned out great. I’ve been missing this meal since my ERC days (not to be confused with missing the days at ERC. Ha.)
I’ve also been loving some candy lately. Lately meaning for the past 25.7 years.

I also did a little baking last night too! Caramel sea salt banana bread recipe coming soon (after I try it and make sure it isn’t totally falawful ;-) You know you laughed! Have a great Friday!!!
1. Do you make up recipes or follow them exactly as written?
2. What’s on your agenda this weekend?
3. Any signs of fall where you live?

I LOVE falafel – going to try this recipe out for sure :-)

Other than baking – no I don’t always follow a recipe as written.

We are going camping – yay!!

The humidity has dropped a bit here, but no signs of fall yet (good!)

Those look delicious! I have thought about joining a moms group, but have been intimidated by it. Maybe I should give it a shot!

We have had some cooler evenings/mornings here which has been a godsend- I’m actually sleeping well (I sleep so much better when it’s cooler!)

I tend to loosely follow recipes or just make it up as I go–depends on what I am in the mood for and what I have in the house

This weekend is a 5k and an 18 miler! Followed by lots of food.

I love falafel! I’m horrible at following recipes exactly how they are listed. I’m particularly guilty of not following recipes when I bake…which is the worst time to do that. I always throw in something random (usually maple syrup) and think I’m a genius… maybe this weekend I’ll try and bake something while actually following a recipe…I can’t wait until you post your banana bread recipe! Sounds delicious.

I always tweak recipes, but I follow all of the important stuff.

The past couple of days have been humid, but at night it’s getting down to the 50′s here, so I can tell that fall is DEFINITELY on the horizon.

That’s definitely some crazy heat! Things are starting to cool down here, and I’ve definitely noticed the days getting a little shorter. It’s kind of sad to say goodbye to summer, but at the same time, this is my favorite time of the year so I don’t mind all that much. Definitely bring on the fall!

7 Jojo @ RunFastEatLots August 9, 2013 at 6:45 am

I usually look at recipes online to get ideas, but I don’t follow them word for word. I usually tweak it here and there, to suit my tastes. I do this when I’m baking, sometimes, even though it’s probably not a good idea. My baked goods usually turn out well, though, so I guess it’s good to experiment!

I am starting my new job on Saturday and then going clothes shopping with my mom. On Sunday, I am going on a trail run with my running club and then heading into DC for dinner.

Yum – that burger looks so good! Great photo too, I might add! ;)

I think I’ve asked you this before, but how did you find your mom’s group?

Ugh, I DON’T want fall. The temps haven’t been as high as I’d like them to do :(. I need more summer! I sometimes follow recipes exactly, but sometimes wing it if I just wanted to use one for a general idea and then personalize it!

There are a couple things I make without a recipe but for the most part I need one. I’m not quite experienced enough of a chef yet. I should work on that.

I wish it were fall here!! It’s staying in the 90s which is totally not fall weather. Oh well. It will be here soon enough :)

I don’t ever follow recipes the way they are written. I’m a go by feel and taste kind of girl… no one has time to measure 1/4 of a teaspoon EVERY time.

I always just throw in things when I’m cooking. It’s really hard for me to follow a recipe except when it comes to baking. I’m a great cook but not a great baker.

Wow!! That falafel burger looks delicious! I am terrible at following a recipe… Tend to improvise ;) I am wearing a wind breaker and a scarf right now :) it’s raining and cold here in SF!

17 Corrine @ Eat Run Wine August 9, 2013 at 9:23 am

I usually look at a few recipes, choose my favorites from all of them, and make my own up. Unless I’m baking, then I stick to the directions. Usually. :)

My husband, sister and I have a 5k in the morning! Then I’m getting a much needed hair cut/color, a huge friend/family dinner Saturday night, and a going away party on Sunday before my sister leaves for the semester to study abroad in Europe!

I live in the South too… it’s only getting hotter here!

I make up recipes all the time. It’s the best way to cook! Falafs (that’s what I call them) are my favorite… I LOVE them! I like to bake them rather than fry them to make them slightly healthier ;) No signs of Fall here in Florida and they won’t be here until November probably!

Mmmm those falafel burgers look amazing! I usually look at recipes for a general idea and/or cooking times and temperatures, but then I just do my own thing when I actually make the dish. My mom likes to jut look at pictures and make recipes based off of them!

I really should try harder to get involved in a mom’s group. I tried to join one last year and was rejected because they were full! No luck since then.

LOVE falafel!!

Definitely going to try making falafel burgers soon … I miss our falafel days in Doha! Next time you make tzatziki try putting small diced or shredded cucumber, garlic, dill, optional (olive oil and lemon juice) in it! That’s how we always had it in Doha and when we went to Turkey! The cucumber and dill give it such a refreshing taste! It also makes a great dip for veggies, pretzels, and pita chips!

27 Andrea R. @ Morning Runner Girl August 9, 2013 at 9:14 pm

haha I totally did laugh at the “falawful” :) I am easy to make happy I guess!

I try to follow recipes, then don’t have enough of the ingredients, so start trying to sub my own things in– this works about 3% of the time. The other 97% of the time the end product is disgusting and thrown out haha

This weekend I am packing up my apartment to move!! so stressful and SWEATY! haha it is for sure a workout! Also got a long run on the books which has me pumped! :)

Wow you guys are having a heat wave! yikes! We actually have been unseasonable look weather, it is like winter out here, only high-80′s low-90′s out here in Southern California.

It depends on the recipe if I had never made it before than I will follow it exactly but second time around I will adjust to what I liked or didn’t like about the initial try!
