Our Mexican style Fourth of July.

I hope everyone had a great Independence Day yesterday!

I began the day with an 8 mile run in my new shoes with my GPS watch. I definitely can’t wear that thing all the time? I get a little competitive and never want my pace to be slower than it used to be. Final overall average pace was 7:20 and my first mile was 9:30. It takes me more than a little while to get my rear moving ;-)

When I got home my wonderful husband had made us Reese’s peanut butter pancakes. Keeper :-)

Next week is our three year anniversary so we went to the mall to get him his anniversary gift (a new watch ((I already bought my own?)) Sorry Noah, no watches for you. Maybe when you’re two.

Please don’t judge us, but we made a Mexican casserole for dinner. Joe’s reasoning: “Because we can. ‘Merica.”

We went for our normal walk after dinner and got to see a ton of fireworks! When we got back on our street the neighbors were all hanging out on the cul-de-sac so we chatted until midnight (aka the latest I have stayed awake?. ever) and watched the fireworks they had as well. It was an awesome day!

That casserole looks so tasty! Now I want mexican food! :) The best thing I ate yesterday- potato salad :) and I did get to see fireworks! And they were so late, glad I have today off of work! :) Noah is also so cute!!

1. What was the best thing you ate yesterday?- The omelet my husband had ready for me after my 5 mile run! Complete with a mimosa :) The wings he made later that day were great too, but I don’t think anything ever beats brunch.

2. Did you get to see fireworks?- No. We heard some people attempting them. It’s been monsooning in Georgia for the past few days, so most fireworks shows were postponed until Labor Day. :(

3. Who?s off of work today!?!- Ew, not me :( I definitely wish I was though!

Yesterday I ran a 15k, went to see Lone Ranger, ate lots of good food and watched neighborhood fireworks. It was a good day :)

I had a hotdog yesterday! Please don’t judge, but I love those things and only eat them at the occasional BBQ or baseball game! :-)

My hubby and I went for a walk to our friends’ house last night and on our way home, we watched fireworks going off all over our neighborhood. It was really cool!

I saw fireworks in the distance as I drove home from my in-laws. Our big celebration is actually tonight. Some friends have a HUGE party like 200 people and he does a huge show that rivals any town show and he got a permit from the city so he could do it tonight.

The best thing I ate was probably my s’more last night. And peanut butter pancakes!? Sound amazing!

Reese’s peanut butter pancakes? Yes, please. Sounds like the perfect start to your holiday.
I seriously can’t get enough of Mexican food, I probably eat it at least 3 times per week. It’s just the best.

Yesterday I had a Chicago style soy dog and it was a reminder of home :D I only got to see a few fireworks, but I’m going to see some tonight, so I’m excited! I’m off of work for the next two weeks until I leave for Costa Rica for work!

A jennie-o turkey burger. It was great!
But actually, your pancakes look better :)!
I do that ALL the time to my husband….buy my own gift! I just did the same thing with my birthday present!!!
7:20 is a great pace…it is even better when you say your 1st mile was 9:30….man did you get moving after that!!! :)

I saw some fireworks, not the big show but a bunch of neighborhood ones. I worked today but only until 3 pm, so it wasn’t so bad. That mexican casserole looks divine!

Unfortunately, no fireworks here. It’s been raining so much that most places cancelled their fireworks shows and postponed them until late. Sad. :-(
