Mexico meets Italy

In case anyone was wondering, the speed limit in the HOV lane is 10 mph slower than it is on the freeway. If someone could please explain the reasoning behind why driving in two’s means you need to go slower than the rest of traffic I’d appreciate it. Noah didn’t know and even this cute smile couldn’t get him out of a ticket this morning… Merry Christmas to you too, Officer. We aren’t bitter, we promise.

Unrelated, today I have an awesome, quick and easy recipe to share with you! It’s a favorite in our house. If you’re looking for something different to do with pasta give this a try. An added bonus is it’s HEALTHY!


  • 3 cups whole wheat pasta
  • 8 oz. plain greek yogurt
  • 6 oz enchilada sauce
  • 1/2 pack enchilada seasoning
  • 2 boneless chicken breasts
  • 1/2 cup low fat shredded cheese
  • jalepenos to taste


  1. Boil pasta until tender, drain
  2. Add greek yogurt, enchilada sauce, chicken, and cheese and stir
  3. Top with jalepenos and more cheese if desired

If it makes you feel any better I just paid off the ticket I got a few weeks ago….some people are just born to go fast;)

…just two thoughts…next time you get a call asking for donations to the local police dept. kindly explain you already gave by paying for an inflated ticket. Secondly, since Noah’s awesome smile didn’t work on the officer, keep a stash of Joan’s toffee tucked away in your glove compartment-surely it would do the trick! But personally, I’d rather have Noah!
