Weekend shenanigans.

by Elizabeth on January 27, 2014

Hey, friends! Another Monday after a three day weekend (sigh?.) In all seriousness, I really don’t mind Mondays :-) I plan on getting back on the yoga bandwagon this morning and at some point this week (depending on how my back feels) trying the new Body Pump class release they launched Saturday!

We had a great weekend over here. Friday was REALLY cold for Texas. Heck, it snowed about an hour north of here where a bunch of my family lives. It only snows about once every ten years so almost all of Houston cancelled school haha! It was the perfect day to try a new-to-me crockpot recipe and catch up on watching the Bachelor with Joe.

For dinner, I decided on 5 cheese lasagna with some ingredients I had on hand! I simply mixed shredded chicken with four cheese pasta sauce and put it in the bottom of the crock pot, placed a layer of swiss, colby jack, monterrey jack, cream cheese, and lasagna noodles on top of that and repeated the process twice. On the very top I added more monterrey jack and goat cheese. It cooked for about three hours on low and was done. Joe and I agreed the goat cheese made the dish! Then again when does goat cheese not make a dish?

After dinner we went to McDonald’s for a red box movie and an ice cream cone ;-)

Saturday was much better weather wise so we went for a family walk, Joe went to see Lone Survivor, I did some scrapbooking for a friend, and I actually attempted another crockpot dish that was a complete bust. It was a garlic parmesan meat and rice dish we ended up tossing. You win some and lose some, right? Luckily we weren’t short on leftovers from the night before.

Sunday morning I went for a 5 mile run in the wonderful 55 degree weather! Don’t be too jealous since another cold front is headed here this afternoon. After church we had my family over for the afternoon to play with Noah! He sure loves his grandparents.

Our evening was spent in the cul-de-sac playing with the neighborhood kiddos! They had a blast. Every month the women on our street go out for a girls’ night and it happens to be Wednesday this week! I’m already looking forward to it :-)

Random new (to me) blogs I’m loving that might interest you:

Peanut Butter Runner- Great for healthy recipes and yoga tips along with quick workouts! I think I like her a lot because she reminds me of my therapist? haha.

Hummussapien- Awesome healthy recipes and I really like how passionate she is about quality nutrition. My sister recommended her!

Yoga by Candace- I know, I know, more yoga. She posts 15 minute videos you can do at home which I love!

Have a great Monday!!!

Questions:

1. What was the best past about your weekend?

2. Share some blogs you’re loving lately!

3. Thoughts on Juan Pablo? I really like him!

I’m sorry… I don’t like Juan Pablo and I never have. If I watch any episodes this year it will be purely to be social and hang out with my friends who are watching. I did watch the wedding last night though…but it was for the same reason haha!
When I lived in Houston, there was an ice “scare” and almost the whole city shut down. Don’t worry, my school district didn’t, so I didn’t even benefit from it :)

I went to DC this weekend, so the best part was running straight up Independence, all the way to Capitol Hill. It is always breathtaking, and I so envy people who get to live there. I’ve really been loving MY blog lately, lol, because I’ve been moving heaven and earth to work on it lately. And thoughts on Juan Pablo? I watched the first few episodes, but I’m really not a fan, especially not now after his dumb comments about gay people. I think I’m over the Bachelor, but that doesn’t mean I’m over my addiction to trashy television!

We had another military ball on Friday, and the rest of the weekend was pretty low-key. LOVE Peanut Butter Runner- been reading Jen’s blog for about 2 years and have made a ton of her recipes!

Hi Elizabeth! I just started my blog a few days ago!! I just wanted to send a comment to say that I enjoy reading your blog. Also, you and some blogs that I read, have inspired me to build the courage to start my own. I love running & food A LOT as well. Thank you for sharing your story! Do you have any tips for me as I start my blog?

You’ve inspired me to make something in the crock pot this week!

I just got in from a delightful run on the packed snow and the temps are in the mid 40′s; however, we are under a windchill warning for tonight. Windchills might get as low as -10°! As much as I love snow, I’m not a fan of blustery wind!

That lasagna looks awesome! Did you use the no-boil noodles or just normal ones? I’ve been trying to use my crockpot more lately…always looking for new things to try!

I watched the Bachelor for the first time in about 3 years last week and I don’t know if the show has just gotten worse or if I have changed but I thought it was so ridiculous and stupid.

Had a great weekend of working out and relaxing!

That lasagna sounds so yummy! I’m glad you got to run in the warm weather! I’m so bummed, it’s nice out today but I’m getting over a chest cold so don’t want to risk running. of course, tomorrow when it’s 15 degrees again I’ll probably feel fine!

I got to see my parents this weekend so that was definitely the best part! They live 3 hours away, so I don’t get to see them a ton. :)

I love that school was closed because it snowed a little :) I truly wish I lived somewhere warmer like that! Schools were closed here today because of the negative 20-degree temps and 20-mph winds on top of that. Minnesota in January is so not my favorite ;)

I’m completely jealous of your 55 degree weather. Best part of my weekend? Chili and cornbread and The Healthy Maven’s PB chocolate chip blondies! My goal is to start actually MAKING the new recipes i’m “pinning”, so I’m thinking 1 a week is a good goal! The blondies were a hit with the Hus and the Mom!

One of my favorite blogs is hungryrunnergirl.com

I just started my own blog, but I am finding it really hard to get followers. It is tough when you put your heart and time into something and you struggle to make it successful. I won’t give up though, maybe one day I will have as many followers as you do.
