Food and running updates.

Off to Brazil tonight! My father-in-law has a rotational job there every other month, so he and my mother-in-law have an apartment on Copacabana Beach in Rio de Janiero and know all the cool stuff to see and do! Noah turns two in less than two weeks so we squeaked our trip in without having to actually pay for his plane ticket! We are super excited to visit!!! It works out well that they have also offered to watch Noah if we want to go tour on our own too.

Joe and I are semi worried that we have an overnight flight and Noah hasn’t been on a plane since before he was a year old. Pray for us…

Yesterday it rained pretty much all day so we were stuck inside and I needed some comfort food. Leftover mac and cheese with extra velveeta cheese and extra salt was the best choice I could have made.

I even shared some with Noah and we followed it up with flaming hot cheetos.

Sunday night I was also needing something nutritious (extreme sarcasm) and decided to make fried chicken. If you never make anything else I tell you to MAKE THIS!!! I followed my usual fried chicken recipe but used some Garlic Parmesan wing sauce I found at Target and also added extra parmesan cheese and garlic salt.

I realize my food choices lately (BBQ, sausage, McDonald’s, mac and cheese and fried chicken) aren’t what most people would consider “healthy” but honestly, I’ve never felt like I’ve been this far along in recovery or had so little anxiety around things like meals cooked by others, unplanned/surprise events, and traveling. Food is food and I am focusing on enjoying the people and time I have rather than being all stressed out. It’s so freeing and I’m excited to keep improving!

So what’s been happening running wise? Well as you all know, I decided over two months ago to take some time off of running. I learned so much from taking a break. A few weeks ago I began running a few times a week and now I run about 5 days a week. When I first started back I couldn’t even make three miles without walking. Slowly I’ve worked back up to about 4-5 miles a day. I’m not going to lie to you it’s slow. I keep reminding myself I have no reason to be in super great shape and I am doing this to ENJOY it. It’s working :-) That being said, if I feel like I need to take time off again I won’t hesitate to do so. 

Packing consumed most of the evening but I did take a dessert break. To my surprise Halloween kit kats are orange…

Who else saw the Jimmy Kimmel video, “I told my kids I ate all their Halloween candy?” I need to be on that… except I wouldn’t be kidding.

Haha, I love that Jimmy Kimmel video. And have a blast in Brazil! My sister lives there and we went to visit during Carnival this year…it was crazy! The beaches are so beautiful. Can’t wait to see some pics and good luck with the flight!

Mac & cheese and fried chicken? I need to come over for dinner. Mmm, mm, mmm. My ultimate comfort food might be chicken pot pie (with a puff pastry crust)! I also looove this baked pasta dish that my dad makes… It’s unreal.

Fingers crossed for your flight!!! And woo hoo for Noah being under 2! That makes it much nicer. :) And I am glad that I am not the only one who eats lots of Halloween candy at one time – you just can’t eat 1!! ;)

Mac and cheese is easily one of the best comfort foods that there is.

My ultimate comfort food is macaroni and cheese or a plate of pancakes! As I said yesterday, I am so, SO proud of you and enjoying my family time is something I’m definitely seeing as a go forth in my recovery too! Have a safe trip and enjoy your time in Brazil!

Your comfort food looks amazing! I am going to look for the parmesan wing sauce next time I am at Target! Brazil sounds amazing so have a great trip. I bought a bag of the mixed Kit Kats in early October for trick-or-treaters and ate it before Halloween. I had to buy new candy to hand out! The Halloween flavor was my fave.

This weather we are having is terrible! I can’t wait for the next cool front. 70 degrees and 90% humidity at 8am is no fun!

I am so excited about your trip to Rio. That is exciting, and I am sure Noah will do great for you guys. I mean, hello, he is almost grown at 2 weeks shy of 2!

That trip to Brazil will be so outstanding-and perfect timing with Noah’s bday. let’s just hope that daylight savings has left him tired like it has for me..then you’re flight will be fine.

I’m not training for anything but have big goals in 2014…the Chicago marathon!! I’m just working on adding some miles after hurting my knee this summer and getting a solid mileage foundation. Starting Crossfit tonight though! So excited :)

Elizabeth,

Thank you so much for your posts. I love reading that you eat “comfort” food. It makes me less afraid to do so myself. Can I ask what your strategy is regarding “food police,” or people who have their opinions about your food choices? I feel like I am getting bombarded at every turn about what I eat and my choices. When I told one woman I ate at McDonald’s occasionally, she gave me a look like I just kicked a puppy! For me, eating at McDonald’s is a big accomplishment! How do you stick to your truth and not get sucked into this elitist eating that is rampant around us? I would love to hear your thoughts. Keep eating that mac and cheese! Mmmmmmm!

I’m sorry you’re experiencing that! I honestly wish I had some magic answer to give you… I do struggle with the same things (and often complain to Joe about it). What’s been really helpful is having a dietician who constantly reminds me that there is no such thing as a “good” food or a “bad” food contrary to what society and most ppl believe. Sure, some have more vitamins, minerals, etc. but at a molecular level your body breaks it all down to energy. All the crap we are fed is a marketing scheme set up so that someone makes money. I try to remind myself that my mental and emotional state are JUST as important as my physical state. Probably more so. And if I’m constantly stressed out and having a negative/fearful relationship with food my quality of life goes way down. I don’t want to be 80 and think I wasted my whole life stressing about nothing! Anyway I hope you continue to fight. You’re an amazing woman and inspiration! You’re in my prayers.

Words of wisdom! I try to remind myself that it is better to eat non-organic than nothing at all. I do the best I can when making food choices for my family and myself. That means sometimes we eat as natural and whole as we are able. Other times McD’s french fries just have to be eaten! I love your honesty, encouragement and normalcy around this topic. My favorite comfort food would have to be homemade soups, chili, or breakfast breads.

Oh my gosh Velveeta! My favorite comfort food is mac n’ cheese for sure. Can’t get better than that! Right now I’m running to run. I just ran my first marathon so I’m taking some time off from serious running. Feels great!
